In terms of raw materials, including:

  • Green beans 60g
  • Spring roll rice paper 400g (1 bag)
  • White tofu 1 piece
  • Carrot 200g
  • Taro 400g
  • Cat mushroom 30g (wood ear)
  • Cassava root 200g (bean)
  • Vermicelli 50 gr
  • 1 lemon
  • 3 chili peppers
  • 2 green onions (or baro onions)
  • 2 tablespoons fragrant juice (pineapple/pineapple juice)
  • Common spices 1 little (seasoning/sugar/salt/pepper)
  • 200ml cooking oil

How to make:

Step 1: Prepare ingredients

  • Put the vermicelli in a bowl, pour a warm amount of water to cover the vermicelli and soak for about 10-15 minutes to soften the vermicelli. Then, use scissors to cut the vermicelli into bite-sized pieces about 1 finger and sift to drain.
  • Soak with boiling water for about 5 minutes. Next, scoop the tofu into a cloth bag, use a spoon to finely squeeze it out, then squeeze the tofu to drain, and put it in a bowl.
  • Wash the green beans, soak them softly in warm water for 2-3 hours, remove the shells, then steam for about 15 minutes until the beans are soft.
  • Peel the cassava root, use a grater knife to grate the cassava root into small strips, add about 1/2 teaspoon of salt, mix well, and soak for about 5 minutes. Then, put the cassava root in a cloth bag and squeeze out the water.
  • With carrots and taro, you wash, peel off the skin and also use a grater to peel into small fibers.
  • Soak the cat mushrooms in warm water for about 10 minutes to soften the mushrooms, cut off the mushroom legs. Next, chop the cat mushrooms.
  • Green onions: Divide the leaves and the head of the onion separately, each part is chopped.

Step 2: Stir-fry the tofu and fry the potatoes

  • Put the pan on the stove, add 3-4 tablespoons of cooking oil to the pan and fry the green onion heads over medium heat. Then, pour the green onions into a strainer to extract the oil, and put the fried onions into a container.
  • Continue using the pan earlier, add about 2 tablespoons of onion oil, then add all the tofu to the pan, season with 1 teaspoon of vegetarian seasoning, 1 teaspoon of sugar, 1/2 teaspoon of pepper, mix well and stir-fry the tofu over medium heat until you see the tofu is firm, then put it in a bowl.
  • Put a new pan on the stove, put about 100ml of cooking oil in the pan, heat the oil over medium heat. When you see that the oil starts to boil, add the taro to the pan and fry it golden. Then, put the fried taro on a plate lined with oil-absorbent paper to drain the oil.

Step 3: Mix the spring roll filling

  • First, put all the ingredients in turn: fried taro, tofu, mushrooms, carrots, cassava, green beans, fried onions, and a few green onions in a tray.
  • Next, season the mixture with 2 teaspoons of vegetarian seasoning, 1/2 teaspoon salt, 2 teaspoons sugar, 1/2 teaspoon MSG, and a pinch of pepper. Then, use your hands or chopsticks to mix the fillings together.

Step 4: Fried Spring Rolls

  • Stir 1 tablespoon of flour with 2 tablespoons of water in a cup until the mixture becomes gelatinous.
  • Fold one side of the rice paper and place about 1/2 tablespoon of filling onto the triangular fold.
  • Roll up the rice paper and fold the other two sides to secure the filling inside. To ensure the spring rolls stay together, apply a small amount of the flour-water mixture on the edge of the remaining rice paper and seal the rolls.
  • Repeat this process until all the ingredients are used.

Step 5: Fry the Spring Rolls

  • Place a pan on the stove and add approximately 200ml of cooking oil, enough to cover the pan. Heat the oil over medium heat.
  • Once the oil starts to boil, carefully add the spring rolls one by one to the pan. Fry them over high heat, turning them evenly on both sides until they turn golden brown. Then, remove them from the pan and place them on a plate lined with oil-absorbent paper.

Step 6: Make the Dipping Sauce

  • In a pan, combine 2 tablespoons of sugar, 60ml of water, and 2 tablespoons of aromatic water. Stir well and heat over low heat for about 2 minutes. Then, turn off the heat.
  • Transfer the mixture to a bowl and add 2 tablespoons of vegetarian fish sauce and 1 teaspoon of lemon juice. Stir well.
  • Finely chop the chili and add it to a cup of dipping sauce.
