TIPS TO PREVENT OIL SPLASHING WHEN FRYING

Fried food is always a delicious choice for meals, whether it’s fried fish, fried chicken, or pan-fried pork. However, the hot oil splashing out when frying can cause skin burns, create a mess in the kitchen, and result in significant oil loss. To avoid these issues, here are some simple tips you can follow:

1. Use a high-walled pan

    • A high-walled, non-stick pan is a smart choice for frying.
    • It helps you flip food easily, prevents burning and sticking during frying, and enhances the dish’s appearance.
    • Choose a pan with walls at least 5cm high to minimize grease splashing and potential harm.

2. Let the food drain

    • Avoid frying vegetables that have just been washed or defrosted food that still has water.
    • Water and cooking oil are insoluble, so dropping water-laden food into hot oil causes splashing.
    • Dry the food thoroughly using blotting paper or a clean cloth before frying.

3. Add salt before frying

    • After heating the oil in the pan, sprinkle a little salt evenly before adding the food.
    • Salt not only detoxifies the oil but also significantly reduces oil splashing.
    • Use a small amount of salt to avoid altering the dish’s flavor.

4. Rub lemon into the bottom of the pan

    • Rubbing a slice of lemon into the bottom of the pan before adding oil effectively limits grease splashing.
    • Lemon juice creates a steam layer when in contact with hot oil, reducing oil splashing while adding a subtle aroma and tanginess to your food.

5. Apply ginger to the pan

    • Before pouring oil into the pan, use pan-fried ginger to prevent splashing.
    • Wash and dry a ginger root, then cut it into thin slices.
    • Heat the pan, add the ginger slices, and use chopsticks to press and rub them all over the bottom of the pan for about two or three minutes.
    • Remove the ginger slices and proceed with frying as usual.

6. Use flour to absorb less water

    • Adding flour to the food to be fried helps absorb excess water and dry the surface.
    • After adding flour, mix and shake well before frying immediately.
    • The flour creates an outer coating that prevents hot oil from splashing, resulting in evenly cooked and flavorful food.
    • Shake off or remove excess flour to prevent burning during frying.
